Cook diced apples with butter, brown sugar, spices, vanilla, and salt for 5–7 minutes. Stir in cornstarch slurry and cook until thick. Cool completely.
Cut pie crusts into 4x6 inch rectangles and fill each with 2 tablespoons of cooled filling.
Brush edges with water, fold over, seal with a fork, and cut 2 steam slits on top.
Fry at 350°F for 3 minutes per side until golden and blistered.
Roll warm pies in cinnamon-sugar mixture and serve.
Notes
Filling must cool completely before assembling. Steam slits prevent the pies from bursting.
